Pickled Onions with Honey

  • 4 cups white vinegar, cider vinegar or wine
  • 1 cup honey
  • pickling onions
  • herbs & spices to taste

Peel and/or slice pickling onions. Pack into sterilised jars with bay leaves, a couple of chilies, mixed-coloured peppercorns and all-spice berries.

Bring vinegar to a boil, take off heat and stir in honey. Pour over onions and seal.

Ready to serve in about four days.
